Raw Vegan Noodles With Spicy Peanut Sauce

5 min read

Thai food is among the meals that I’ve missed essentially the most since turning into a uncooked vegan, so I created this recipe to fulfill my cravings.  In my humble opinion, Thai food simply isn’t full with out peanuts or a great peanut sauce.  I’ve averted peanut butter for a very long time, even natural peanut butter, because of the aflatoxin (a carcinogen) from the mildew that grows on standard peanuts.  I not too long ago found Vivapura’s Wild Jungle Peanuts.  They are an exquisite, distinctive number of peanut which are harvested from Ecuador and they’re freed from aflatoxin.  I made a decision to buy a jar of uncooked peanut butter constituted of these unique peanuts and I used to be pleasantly shocked by the sleek taste, so I experimented with making a peanut sauce.  I’m fairly happy with the consequence, so right here’s the recipe:

2 Tbsp raw jungle peanut butter

1 Tbsp coconut aminos

1/3 of a zucchini (peeled)

1 small piece of ginger

1/2 clove of garlic

2 medjool dates (pitted)

Juice of 1 lime

1/2 pink bell pepper

Cayenne pepper to style

A splash of coconut water

  1. Blend all of the components for the sauce in a blender till clean.

  1. Kelp noodles may be an acquired style.  The first time I had them, I didn’t know tips on how to put together them, and I discovered them to be fairly off-putting.  About a 12 months after my first expertise with them, I had them at a restaurant in a uncooked Pad Thai dish.  My opinion of them utterly modified (after tasting them ready appropriately).  The trick I realized is that this: take away the kelp noodles from the package deal and instantly rinse and pressure them.  Then, switch them to a bowl and squeeze the juice of 3-4 lemons on them and one heaping teaspoon of pink salt (don’t fear you’ll be rinsing them once more).  Make certain the salt and lemon juice is completely massaged into the noodles (utilizing your fingers is best than attempting to make use of a fork at this level).  Let the noodles marinate on this combination for 3-4 hours; the enzymes within the lemon and salt will soften the noodles an amazing deal and they’ll have a “cooked” consistency afterward.  Once they’re performed marinating, rinse and pressure them one final time.
  2. Pour the sauce over the noodles.  Garnish with some crushed pink pepper flakes, crushed jungle peanuts or cashews, and a lime wedge or two.

That’s it! I hope you get pleasure from this recipe as a lot as I do.
